Raw Vegan Mint Chocolate Shamrock Cookies

I wanted to make something sweet for St. Patricks Day. These Raw Vegan Mint Chocolate Shamrock Cookies were just the thing! They were a hit in my household!

Ingredients:

Cookies

1/2 cup oat groats

1/2 cup raw peanuts

1 1/4 cup pitted dates

Chocolate Frosting

3 tbsp melted coconut oil

3 tbsp cacao powder

3 tbsp coconut nectar

2 drops peppermint essential oil (food grade)

Finely chopped macadamia nuts for sprinkling

Method:

For the cookies: Grind up the oat groats in a grain mill and set aside. If you don’t have a grain mill you can substitute for oat flour or any grain flour you like. Add the peanuts into a food processor and process until flour like. To the processor add in the oat flour and dates and process until it all sticks together. Roll out the dough and use a shamrock cookie cutter to create shapes. Dehydrate at 115° for five hours. If you don’t have a dehydrator you can use your oven on the lowest setting with the door cracked. This may not ensure the cookies remain raw but you can still create the recipe (may not need 5 hrs). 

For the frosting: Stir together all the ingredients and spread it on top of your cookies. Top with finely chopped macadamia nuts. Enjoy!
