This fresh and delicious vegan blueberry kiwi mojito is a fun virgin drink to have on St. Patricks Day. You could even cut the kiwi garnish into a shamrock shape!
¼ cup blueberries
2 kiwis, peeled
1 tbsp raw agave
3 mint leaves
In a food processor, combine kiwis, agave, and juice from half the lime. Combine and set aside.
In your glass, muddle half of the blueberries with the mint leaves. If you don’t have a muddler you can use a mortar and pestle. Pour kiwi mixture on top. Add in your crushed ice almost to the top of the glass. Fill with sparkling water and top with remaining blueberries and a slice of kiwi.
